Gourmet and refined, this Rosé de Saignée is made from a selection of our best Pinot Noir Premier Cru grapes from a single year.

Terroir

Vineyards in the heart of the Premier Cru terroir of the Montagne de Reims:
Ludes, Chigny-les-Roses, Rilly-la-Montagne.

Chalky soil.
Cordon pruning.
Hand-harvested.

Elaboration

Sorting in the vineyard and then on a sorting table.
Destemming, 100% destemmed.
Maceration in open vats for 48 hours.
Double tasting and daily pump-overs.
70% free-run rosé, 30% press rosé.
Complete malolactic fermentation.
Vinification in temperature-controlled stainless steel tanks.

Production: 235 bottles.
Aging: 4 years on lees in the cellar.
Manual riddling on racks.
Labeling: screen printing on the bottle.
Numbering on the bottle and capsule.

Dosage: 5.0 g/L
Alcohol: 12.4% vol.

Tasting

Dress of a pronounced and brilliant ruby ​​color.

On the nose, the red fruit character is very prominent, leaning towards notes of black fruit.
With swirling, a concentration develops around the black fruits with aniseed hints.
Notes of caramel and smoke complete the profile of this red wine.

On the palate, a crisp, vinous attack reminiscent of rosé, with a touch of acidity on the finish.
The overall impression is of a light red wine, offering juicy, luscious fruit and a lingering biscuit-like finish.
The dosage is subtle and well-integrated; the bubbles remain lively yet refreshing.
Notes of fruit in brandy also emerge in this wine, which has evolved more than anticipated, lending it a more gourmet character with a rich aromatic profile.

Serve at 7-8°C.
