Ludes, Chigny-Les-Roses, Rilly-La-Montagne.

Chalky soil.
Cordon & Chablis pruning.
Manual harvest.

Elaboration

Coquard press 4,000kg.
Aging: 1 year in oak barrels.
Complete malolactic fermentation.
Vinification in temperature-controlled stainless steel vats.

Bottling: 300 bottles.
Aging: 8 years on slats in the cellar.
Manual riddling on desk.

Dosage: 1.5 g/L
Alcohol: 12.6% vol.

Tasting

A clear, brilliant robe with golden yellow reflections.

An expressive nose with honey and dried fruits aromas.

A fleshy, ample and rounded palate with notes of white fruits.
Great persistence supported by well-melted woodiness. A rich and delicious wine.

Blending

85% Chardonnay aged in oak barrels
15% Pinot Noir aged in oak barrels

Advices

Can be stored for 1 year, protected from light.
Serve at 7-8°C.

Food and Wine Pairing:
Friends of organ meats such as andouillette or sweetbreads, welcome!
For others, pair it with pâté en croûte or duck
shepherd’s pie with sweet potatoes.
