Elaboration

Sorted at the plot then on sorting table.
Destemmer, 100% destemmed.
Maceration in open vat, 48 hours.
Double tasting daily.
70% Rosé free-run, 30% Rosé press.
Complete malolactic fermentation.
Vinification in temperature-controlled stainless steel vats.

Edition: 235 bottles
Aging: 4 years on lees in the cellar.

Tasting

Marked and brilliant ruby ​​color.

On the first nose, the red fruit aspect is very present, drawing on notes of black fruit.
When brewed, a concentration forms around the black fruits with aniseed roughness.
Notes of caramelized and smoky developments complete the profile of the red wine.

On the palate, a frank and vinous attack of the rosé, with an acidity in the background.
Ambient sensation of light red wine bringing a juicy fruit that is easy to drink on the sponge finger finish.
The dosage is subtle and well integrated, the bubble remains lively but refreshing.
Notes of fruit in brandy also arrive on this wine which presents a more important evolution than anticipated and gives it a more gourmet aspect with an aromatic breadth.

Can be stored for 2 years, protected from light.
Serve at 7-8°C.
